Can dimensions establish that the coin is genuine?

No. Clear scale and calliper photographs are useful consistency checks, but identity and authenticity also require the inscriptions, design, metal surface and uninterrupted edge.

What should happen if the coin is already graded?

Leave the graded holder sealed. Photograph its label, both visible faces and as much of the rim as the holder permits instead of opening it to obtain a weight.
